Shrimp with Garlic Bread Crumbs
- 1⁄2 cup panko bread crumbs
- 1 sprig Italian parsley
- 1 garlic
- 1⁄2 lemon
- 3 tbsp olive oil
- 12 oz shrimp
Preheat oven to 450. Lightly grease a large baking pan. Zest lemon and combine with the bread crumbs, parsley, garlic and salt and pepper to taste. Add enough oil to the bread crumbs to moisten them a bit, about half.
Curl shrimp into a circle in the baking pan, only filling pan with a single layer. Use extra pans if necessary.
Top each shrimp with a spoonful of crumbs and drizzle with the rest of the oil. Bake for 10 minutes, or until the shrimp are pink and the crumbs are lightly browned.
Finish with a squeeze of lemon juice and serve immediately.
